Wines made from grapes that carry their origin

The craft of winemaking begins, first and foremost, with being a good farmer. It may seem obvious, but it is essential. There can be no great wines without exceptional grapes, just as great chefs rely on high-quality ingredients. This is the sine qua non for creating exceptional tasting experiences.

Balance between quality and quantity

At the estate, the team strives to maintain a balance between quality and quantity. The soils must be alive so that the vine can thrive and nourish its fruit with a complex and varied diet, enhancing the aromatic expression, minerality, and purity of each location.

Producing terroir wines means creating wines that are proud of their origin, wines with character, unlike any other, with a strong personality and their own unique aromatic diversity. Only then can the magic of a fine bottle of wine truly work and create emotion.

At the beginning, soil work

Plowing is not just mechanical weeding; it aerates the soil and stimulates microbial and organic life. Treatments, based on sulfur and copper, follow the lunar calendar and must be applied thoughtfully to each parcel. This evolution has happened gradually, with careful consideration, as observations and human interactions have shaped the process.
In conclusion, despite all the love and passion with which he works, the winemaker has only one reason for being:

“To bring a smile of pleasure to the face of those who taste my wine...”
Olivier GIROUX

Biodynamics in service of the vine, wine, and humanity

Biodynamic agriculture is one of the foundations of organic farming.

As early as 1920, farmers began noticing numerous changes in their environment: degeneration of crops, loss of fertility in animals, decline in food quality… These phenomena have intensified over the years with the increased use of chemical and radioactive electromagnetic products.

Biodynamics proposes practices to revitalize crops and the overall environment, reestablishing interactions among all elements (the soil, plants, and animals). The use of biodynamic preparations by wineries is continuously increasing and helps improve the quality of the soil, grapes, and wine.

This mission to regenerate the earth and produce quality products is essential for Olivier Giroux. He has always kept his soils free from chemicals and has practiced biodynamic farming on his vines since 2006.
